Italian Style Baked Zucchini with Panko, Tomatoes and Parmesan

Ingredients

  • 3 Zucchini Halved lengthwise
  • 2 teaspoons Olive oil
  • 1 cup Panko
  • 1 1/4 teaspoon Garlic salt
  • 1 1/4 teaspoon Oregano
  • 1/2 cup Parmesan cheese
  • 1 cup Cherry tomatoes Sliced
  • Salt & pepper To taste

Instructions

  1. Preheat oven to 425 degrees.
  2. Place zucchini on baking pan skin side down and brush with olive oil.
  3. Mix panko, garlic salt, oregano and parmesan in bowl.
  4. Sprinkle panko mixture over zucchini.
  5. Spread sliced cherry tomatoes on top of zucchini.
  6. Bake for 15-20 minutes, until browned.
