Italian Style Baked Zucchini with Panko, Tomatoes and Parmesan
Ingredients
- 3 Zucchini Halved lengthwise
- 2 teaspoons Olive oil
- 1 cup Panko
- 1 1/4 teaspoon Garlic salt
- 1 1/4 teaspoon Oregano
- 1/2 cup Parmesan cheese
- 1 cup Cherry tomatoes Sliced
- Salt & pepper To taste
Instructions
- Preheat oven to 425 degrees.
- Place zucchini on baking pan skin side down and brush with olive oil.
- Mix panko, garlic salt, oregano and parmesan in bowl.
- Sprinkle panko mixture over zucchini.
- Spread sliced cherry tomatoes on top of zucchini.
- Bake for 15-20 minutes, until browned.
