Best Baked Zucchini
Ingredients
- 4 zucchini, quartered lengthwise
- 1 tbsp. extra-virgin olive oil
- 2 cloves garlic, thinly sliced
- 2 tsp. fresh thyme, chopped
- Pinch red pepper flakes
- Kosher salt
- Freshly ground black pepper
- Zest of 1 lemon
- Lemon wedges, for serving
Instructions
- Preheat the oven to 375°. Combine zucchini, oil, garlic, thyme, and red pepper flakes on a large sheet tray. Season with salt and pepper and use your hands to toss zucchini until they are coated in oil and spices.
- Roast until zucchini is tender and slightly golden, 13-15 minutes.
- When zucchini is tender, toss with lemon zest and serve with lemon wedges on the side.
