Best Baked Zucchini

Ingredients

  • 4 zucchini, quartered lengthwise
  • 1 tbsp. extra-virgin olive oil
  • 2 cloves garlic, thinly sliced
  • 2 tsp. fresh thyme, chopped
  • Pinch red pepper flakes
  • Kosher salt
  • Freshly ground black pepper
  • Zest of 1 lemon
  • Lemon wedges, for serving

Instructions

  1. Preheat the oven to 375°. Combine zucchini, oil, garlic, thyme, and red pepper flakes on a large sheet tray. Season with salt and pepper and use your hands to toss zucchini until they are coated in oil and spices.
  2. Roast until zucchini is tender and slightly golden, 13-15 minutes.
  3. When zucchini is tender, toss with lemon zest and serve with lemon wedges on the side.
