Zucchini Squares

Ingredients

  • 3 cups Zucchini thinly sliced
  • 1 1/2 cups Bisquick mix
  • 1/2 cup Onions finely chopped
  • 1/2 cup Parmesan cheese grated
  • 2 tablespoons Fresh parsley chopped
  • 1/2 teaspoon Salt
  • 1/2 teaspoon Seasoned Salt
  • 1/2 teaspoon Fresh Oregano
  • 1/8 teaspoon Black Pepper
  • 1 clove Fresh Garlic minced
  • 1/2 cup Vegetable oil
  • 4 Eggs beaten
  • 1 pound Ground Italian Sausage cooked
  • 1 cup Mozzarella Cheese shredded

Instructions

  1. 1) Preheat oven to 350 degrees. Grease bottom & sides of a 13x9x2 pan.
  2. 2) Stir all ingredients, except mozzarella, together to form a batter and spread in the pan.
  3. 3) Bake about 25 minutes or until lightly browned. Remove and top with mozzarella shreds and return to oven for a few minutes longer to melt and brown.
  4. 4) Remove from oven and let cool 5 minutes. Cut into 12 squares.
