Zucchini Soup
Ingredients
- 1 small Onion Diced
- 2 med Zucchini chopped
- 1 tsp Parsley chopped
- 1/4 cup butter
- 2 cups milk
- 2 cups water
- 1/4 tsp garlic salt
- 1/4 tsp celery salt
- 1 tsp seasoning salt
Instructions
- Add onion, zucchini and parsley in a sauce pan with 2 cups of water and 3 chicken bouillon cubes until tender. Pour into a blender and blend until smooth,
- In the meantime:
- Melt 1/4 cup butter, add one cup of flour, blend well, heat until bubbly, then add 2 cups of milk. Heat on Med. heat, stirring well Until thick. Add the mixture to the blended Zucchini mixture then add:
- 1/4 tsp garlic salt
- 1/4 tsp celery salt
- 1 tsp seasoning salt
