Zucchini Soup

Ingredients

  • 1 small Onion Diced
  • 2 med Zucchini chopped
  • 1 tsp Parsley chopped
  • 1/4 cup butter
  • 2 cups milk
  • 2 cups water
  • 1/4 tsp garlic salt
  • 1/4 tsp celery salt
  • 1 tsp seasoning salt

Instructions

  1. Add onion, zucchini and parsley in a sauce pan with 2 cups of water and 3 chicken bouillon cubes until tender. Pour into a blender and blend until smooth,
  2. In the meantime:
  3. Melt 1/4 cup butter, add one cup of flour, blend well, heat until bubbly, then add 2 cups of milk. Heat on Med. heat, stirring well Until thick. Add the mixture to the blended Zucchini mixture then add:
  4. 1/4 tsp garlic salt
  5. 1/4 tsp celery salt
  6. 1 tsp seasoning salt
