Simple Zucchini Planks Recipe

Ingredients

  • Zucchinis (3 or 4)
  • Grape or cherry tomatoes (any topping of choice works with this, really! It’s a very diverse recipe.)
  • Olive oil
  • Salt and pepper
  • Garlic powder or fresh minced garlic
  • Basil (dried or fresh/chopped)
  • Shredded mozzarella cheese
  • Grated parmasan cheese

Instructions

  1. Preheat oven to 375.
  2. Slice zucchinis in half, length-wise.
  3. Sliver a bit of the green off the bottom to keep them from tipping over.
  4. Brush the tops with olive oil and garlic/garlic powder.
  5. Slice tomatoes and lay them in rows across tops.
  6. Top with the cheeses, basil, salt and pepper.
  7. Bake for 20-30 minutes or until fork tender.
