Simple Zucchini Planks Recipe
Ingredients
- Zucchinis (3 or 4)
- Grape or cherry tomatoes (any topping of choice works with this, really! It’s a very diverse recipe.)
- Olive oil
- Salt and pepper
- Garlic powder or fresh minced garlic
- Basil (dried or fresh/chopped)
- Shredded mozzarella cheese
- Grated parmasan cheese
Instructions
- Preheat oven to 375.
- Slice zucchinis in half, length-wise.
- Sliver a bit of the green off the bottom to keep them from tipping over.
- Brush the tops with olive oil and garlic/garlic powder.
- Slice tomatoes and lay them in rows across tops.
- Top with the cheeses, basil, salt and pepper.
- Bake for 20-30 minutes or until fork tender.
