Zucchini with tomato

Ingredients

  • 2 pounds Zucchini sliced
  • 1 15oz can diced tomatoes
  • 1 large Onion sliced
  • 1 tsp Cinnamon
  • 1 tsp Garlic minced
  • Salt and pepper
  • 1.5 cups Mozzarella shredded
  • 2 tablespoons Olive oil

Instructions

  1. Heat olive oil in pan. Saute onions till soft. Add garlic and cook for 30 sec. Add zucchini and cook till softened. Season with cinnamon and salt and pepper. Add tomatoes and simmer for approx 15 min. Taste for seasoning, Turn off heat, add cheese and cover till melted.
