Baked Zucchini Casserole
Ingredients
- 3 ea Zucchini sliced
- 3 tablespoon Butter
- 1/2 cup Onion chopped
- 1 teaspoon Basil dried
- 1 teaspoon Tarragon dried
- 3 tablespoon White wine
- 1/2 cup Half-and-half cream
- 1/3 cup Sour cream
- 1 pinch Salt, pepper, nutmeg
- 3 tablespoon Parsley chopped
Instructions
- Blanch sliced zucchini in boiling water for 10 seconds. Drain well.
- In saucepan, melt butter, saute onions. Add basil, tarragon, wine and half and half. Whisk in sour cream and remaining spices. Stir in parsley. Toss in zucchini.
- Heat quickly and serve.
