Baked Zucchini Casserole

Ingredients

  • 3 ea Zucchini sliced
  • 3 tablespoon Butter
  • 1/2 cup Onion chopped
  • 1 teaspoon Basil dried
  • 1 teaspoon Tarragon dried
  • 3 tablespoon White wine
  • 1/2 cup Half-and-half cream
  • 1/3 cup Sour cream
  • 1 pinch Salt, pepper, nutmeg
  • 3 tablespoon Parsley chopped

Instructions

  1. Blanch sliced zucchini in boiling water for 10 seconds. Drain well.
  2. In saucepan, melt butter, saute onions. Add basil, tarragon, wine and half and half. Whisk in sour cream and remaining spices. Stir in parsley. Toss in zucchini.
  3. Heat quickly and serve.
