Super Bomb Zucchini Quiche Recipe
Ingredients
- -6 cups of grated or fine chopped skinless zucchini.
- -1 cup of fresh chopped basil
- -1 cup of fresh chopped parsley
- -1.5 cups shredded sharp chedder cheese
- -1.5 cups of Bisquick or similar
- -1/3 cup of Veg oil
- -1 cup of authentic Italian FINE grated Romano cheese
- -6 Eggs
- -1 Tsp of garlic powder or granulated garlic (not salt)
- -Season with salt/pep sprinkle if desired
Instructions
- Mix Zucchini, basil, parsley & chedder in one bowl.
- In a seperate bowl combine the Bisquick, oil, Romano, 6 eggs & garlic powder
- and salt & pep to taste. Beat this mixture very well fully incorporating all.
- Pour this egg mix over Zucchini mixture in the separate bowl, then fold everything together
- Fully. Don’t over stir, but do fold in well.
- Grease, spray or butter a 9x13“ or similar size square baking panpan (Around 2“ deep) if you want to serve square pieces, or grease a round pie pan type if you want to serve pie type wedges.
- Pour mix into greased pan evenly, smooth out top.
- Bake at 360-375 degrees for one hour. Oven temps may vary.
- Check often after 40 minutes.
- Let cool fully before cutting!!
