Tomato-Zucchini Salsa
Ingredients
- 1 1/2 cups chopped seeded tomato
- 1 cup finely chopped zucchini
- 1/2 cup finely chopped bottled roasted red bell peppers
- 2 Tbsp. finely chopped red onion
- 1 Tbsp. finely chopped fresh basil
- 1 Tbsp. finely chopped fresh parsley
- 2 tsp. fresh lemon juice
- 2 tsp. extra-virgin olive oil
- 1 1/2 tsp. capers, drained
- 1/4 tsp. salt
- 1/8 tsp. black pepper
- 1 garlic clove, minced
Instructions
- Combine tomato, zucchini, red bell peppers, red onion, basil, parsley, lemon juice, oil, capers, salt, black pepper and garlic together in a bowl. Serve immediately or refrigerate in an airtight container up to 2 days.
