Tomato-Zucchini Salsa

Ingredients

  • 1 1/2 cups chopped seeded tomato
  • 1 cup finely chopped zucchini
  • 1/2 cup finely chopped bottled roasted red bell peppers
  • 2 Tbsp. finely chopped red onion
  • 1 Tbsp. finely chopped fresh basil
  • 1 Tbsp. finely chopped fresh parsley
  • 2 tsp. fresh lemon juice
  • 2 tsp. extra-virgin olive oil
  • 1 1/2 tsp. capers, drained
  • 1/4 tsp. salt
  • 1/8 tsp. black pepper
  • 1 garlic clove, minced

Instructions

  1. Combine tomato, zucchini, red bell peppers, red onion, basil, parsley, lemon juice, oil, capers, salt, black pepper and garlic together in a bowl. Serve immediately or refrigerate in an airtight container up to 2 days.
