Aunt Chickie’s Zucchini Cupcakes

Ingredients

  • 1/2 cup butter 1 stick
  • 1/2 cup canola oil
  • 1 3/4 cups sugar
  • 1 tsp. vanilla
  • 1/2 tsp salt
  • 1/2 cup sour milk add 1 tsp vinegar to 1/2 cup milk and let stand 5 min
  • 2 1/2 cups unsifted flour
  • 1/2 tsp salt
  • 1/4 cup cocoa
  • 1/2 tsp baking powder
  • 1 tsp baking soda
  • 1/2 tsp cinnamon
  • 1/2 tsp cloves
  • 2 cups zucchini shredded

Instructions

  1. Use a large zucchini. Remove center pulp and seeds. Shred with grater or food processor. Pat dry with paper towel. Cream butter, oil, sugar. Add eggs, one at a time, vanilla and sour milk. Beat with mixer until blended. Mix together dry ingredients and add to creamed mixture. Mix thoroughly, Stir in zucchini and chocolate chips. Spoon batter into paper-lined cupcake pans and bake at 350 degrees for 25-30 minutes.
