Zucchini hotcakes
Ingredients
- 1 1/2 cup Zucchini grated and pressed dry
- 2 tbsp onion grated
- 1/4 cup parmesan cheese grated
- 1/4 cup flour
- 2 Eggs
- 2 tbsp mayonnaise
- 1/4 tsp oregano
- salt and pepper to taste
Instructions
- Melt 1 tablespoon of butter in a skillet. Spoon batter into skillet - 2 tbsp makes a good size. Flatten with spatula and cook on both sides until browned. Top with applesauce, sour cream or tomato sauce.
