Zucchini hotcakes

Ingredients

  • 1 1/2 cup Zucchini grated and pressed dry
  • 2 tbsp onion grated
  • 1/4 cup parmesan cheese grated
  • 1/4 cup flour
  • 2 Eggs
  • 2 tbsp mayonnaise
  • 1/4 tsp oregano
  • salt and pepper to taste

Instructions

  1. Melt 1 tablespoon of butter in a skillet. Spoon batter into skillet - 2 tbsp makes a good size. Flatten with spatula and cook on both sides until browned. Top with applesauce, sour cream or tomato sauce.
