Chicken Zucchini Casserole

Ingredients

  • 2 cups boneless skinless chicken breasts, cut into bite size pieces
  • 2 tablespoons olive oil
  • 1 teaspoon poultry seasoning
  • 1/2 teaspoon garlic powder
  • 2 cups fresh zucchini, sliced
  • 2 medium onions, chopped coarsly
  • 1 1/2 cups chicken broth
  • 4 cups cooked spiral shaped pasta
  • 1 cup light cream
  • 1 cup gruyere cheese, grated

Instructions

  1. Saute the chicken in olive oil until no longer pink.
  2. Add onions, zucchini and poultry season
  3. Saute for 2 - 3 minutes then add the chicken broth.
  4. Simmer another few minutes until zucchini is tender. Remove from heat.
  5. Add chicken and vegetables to cooked pasta in a casserole dish.
  6. Pour cream over, stir gently and top with cheese.
  7. Bake for 30 minutes until cheese is brown.
  8. Serve with green salad.
