Zucchini Potato Soup Recipe

Ingredients

  • 2 tblsp butter or margarine
  • 1/2 an onion diced
  • 3 medium (2 lbs) zucchini shredded
  • 2 med. potatoes diced fine
  • 1/4 c. chicken or vegetable stock
  • salt and pepper
  • 1 stalk celery, diced
  • 1 c. half and half
  • 1 c. chicken or vegetable stock

Instructions

  1. Melt butter in large kettle and saute’ onion in it.
  2. Add squash, cook a couple minutes.
  3. Add potatoes.
  4. Add 1/4c. stock, bring to boil, lower heat, cover and cook 15 minutes.
  5. Purree in blender.
  6. Put back in kettle, add celery, 1c.chicken stock, heat.
  7. Add 1c half and half and salt and pepper to taste.
  8. Heat, do not boil.
