Zucchini Soup

Ingredients

  • 400 grams zucchini chopped
  • 2 medium onions peeled and chopped
  • 1 large carrot peeled and chopped
  • 1 medium potato peeled and chopped
  • 15 grams butter
  • 3 cups water
  • 1 chicken stock cube
  • Salt & pepper
  • 1 tablespoon fresh chives chopped

Instructions

  1. Melt butter in pan, add vegetables and combine well. Cook over medium heat stirring occasionally for about 5 minutes - onions will be starting to soften.
  2. Add water and crumbled stock cube. Bring to boil, reduce heat and simmer covered for 20 minutes.
  3. Puree soup with a stick blender or in a stand blender in two batches. Season with salt and pepper, then return to boil. Add chives and serve while hot.
