Stewed Zucchini With Tomatoes and Garlic

Ingredients

  • 3 to 4 medium zucchini, cut into 1-inch pieces
  • 1 (28-ounce) can diced tomatoes
  • 1 (8-ounce) can tomato sauce
  • 1 cup thinly sliced celery
  • 1 large sweet onion, coarsely chopped
  • 1/2 cup coarsely chopped green bell pepper
  • 2 medium cloves garlic, thinly sliced
  • 1/2 teaspoon granulated sugar, more to taste
  • 1/2 teaspoon fine salt, more to taste
  • 1/4 teaspoon freshly ground black pepper, more to taste

Instructions

  1. Gather the ingredients.
  2. In a medium saucepan, combine the zucchini, tomatoes, tomato sauce, celery, onion, bell pepper, garlic, sugar, salt, and pepper. Place the pan over high heat and bring to a boil.
  3. Reduce the heat to low, cover the pan, and simmer , stirring occasionally, until the vegetables are tender, about 35 minutes. Remove the cover and cook until the mixture is slightly thicker, about 10 minutes more.
  4. Taste and adjust seasonings. Serve
