Zucchini and Parmesan Pasta
Ingredients
- 4 small or 2 large zucchini
- 2 tablespoon of olive oil
- 1 pound of fettuccine or spaghetti
- 2 cloves of garlic (minced)
- kosher salt and freshly ground pepper to taste
- 1 cup of freshly shredded parmesan cheese
Instructions
- Start by shredding zucchini using largest holes on a box grater.
- Cook pasta according to directions on box.
- In a large saute pan, heat olive oil over medium heat.
- Saute garlic for 1-2 minutes until softened but not browned.
- Add zucchini to pan and season with 1/2 teaspoon of salt and pepper to taste.
- Sauté for about five minutes, just until tender.
- Add cooked pasta to pan and mix to combine.
- Stir in parmesan cheese and season with additional salt and pepper as needed.
