Zucchini Pancakes
Ingredients
- 2 cup Zucchini shredded
- 1/3 cup Oat flour or wheat flour
- 1 Egg
- 1/4 cup Parmesan cheese shredded (fresh or dry)
- Black pepper to taste
Instructions
- 1. Beat egg and add the rest of the ingredients except zucchini. Mix well. Add zucchini.
- 2. Head a heavy-duty skillet with either margarine or butter/olive oil spray.
- 3. Form zucchini mix into pancakes and fry approximately 3 minutes per side.
