Zucchini Patties Recipe
Ingredients
- 2 cups zucchini; grated
- 2 eggs; beaten
- 2 teaspoons onion powder
- 1/2 cup potato flakes
- 2 garlic cloves; minced
- 1/2 cup Parmesan cheese
- 1/2 cup Feta cheese; crumbled
- Old Bay seasoning; to taste
Instructions
- Salt zucchini and set aside for about 15 minutes. Squeeze liquid out.
- In a medium bowl, combine zucchini, eggs, onion powder, potato flakes, garlic, Parmesan, Feta cheese and Old Bay seasoning.
- Mix well and form into 8 patties.
- Heat a small amount of oil in a skillet over medium-high heat. Cook each patty for a few minutes on each side until golden.
